Tortilla casserole

I have actually made this dish (page 337) once before on Christmas Eve 2007. Both occasions had a similar result. Good but not enough heat. This dish layers corn tortillas with a mixture of onions, poblano chiles, spinach, cream cheese, and black beans. It is supposed to be accompanied by tomatillo salsa, but for some reason I always make it in the dead of winter when there is not a tomatillo to be found. I replaced the tomatillo salsa with a topping of regular salsa and pico de gallo, but I think something is still missing. I have come to respect dishes that require baking before they are done. This gives me time to do dishes and clean the kitchen before dinner is ready, making cleanup after the final reveal less work in the end.

  1. I am very interested in this blog. I have so much to say, but won't say it all here. First, I am slowly reading through the back posts. And I'm mainly interested because I love Martha Stewart but seven times out of ten her recipes have been a dissapointment...for me that is. I have this theory that her creations or her "employees" creations are not tried and true. And I see you are experiencing some of this too. A lot of time something is just missing.

    On the other hand. I've made a couple of things that were out of this world like a citrus tart that I found last year in her Living magazine. It was involved. But, it was so good. I blogged it of course. THat things was like a work of art.

    And one last thing. Chicken dumpling soup is so good. My mom made the best recipe for this ever!!!!! And it does not have the dairy content that this recipe has. I bet you would enjoy it. Once you get the hang of it, dumplings are pretty easy. And you can make them a few different ways.

  2. i have found martha's recipes to be somewhat complicated, i have done well with only a few. her mac and cheese is the best i have ever made but found it to be complicated and i think i used every pot in the kitchen. what i find best, for me, is her tips in the kitchen, many of those i have used.

    i love casseroles of any kind, they can be made ahead, in the morning when i still have energy. cleanup is a breeze!!!!
